  • 700 gr of white onions
  • 700 gr of red onions
  • 30 gr of butter
  • 60 gr of olive oil
  • A teaspoon of sugar, black pepper, and salt
  • Two cloves of garlic, minced
  • 120 ml of dry white wine
  • 8 liters of vegetable stock with low sodium
  • Two pieces of bay leaves
  • Six sprigs of thyme

For the topping

  • Slices of French bread
  • Swiss Gruyere cheese


1Start the cooking process by peeling and slices the white as well as the red onions into half lengthways. Then, cut each half into strips for around a quarter inch wide. Here, the onions that you have cut will look like little semi-circles when you separate them apart.

2Then, heat a skillet over medium or low heat and fill with butter in it. Melt it down until it is thoroughly melted. Next, put the onion on top of it. Stir well and cook the ingredients for around 10 minutes. Make sure you turn the heat low so that the onions will get soft before they all turn brown.

3After that, turn the heat into medium-heat and add the sugar in it. Stir the onions mixture occasionally every 10 minutes. Here, you don’t need to cover the skillet. Simply do this step for around an hour until the onions are caramelized and brown.

5Now, you can prepare the oven by heating it up over 350 Fahrenheit-degree or 175 celsius-degree. Then, put the soup into several bowls. Give a slice of french bread on top of it and garnish with Gruyere cheese. Place these bowls in the oven and bake for around 20 minutes. In the last minutes, switch to grill setting until the cheese is golden brown.
