How to make Lobster Pot Pie (Homard en Croûte)

  • 45 gr of unsalted butter
  • Three cloves garlic, finely minced
  • A medium yellow onion, finely minced
  • 50 ml of brandy
  • 30 gr flour, you may prepare more
  • 350 gr of heavy cream
  • 450 gr raw and thawed lobster meat, cut into 3⁄4-inch pieces
  • A pinch of grated nutmeg
  • Kosher salt and ground black pepper as the seasoning
  • A package of puff pastry
  • One beaten egg


1Firstly, you can prepare a saucepan and heat it over medium-high heat. After that, add the minced garlic and onion. Cook these ingredients for around 5 to 7 minutes or until the color turns golden or until you smell the fragrance coming from the cooked ingredients.

2Next, also add the brandy and cook again for around a couple minute until half of the brandy is reduced. After this, you can continue to whisk the ingredients with the flour and cook for another 2 minutes. Also, add the cream and cook again until the mixture is boiled. Don’t forget to stir it occasionally until it gets thicken for about 3 to 4 minutes.

3After the mixture gets boiled, add the lobster and nutmeg in it. Make sure that you also add the kosher salt and ground pepper to the mixture. Next, stir them all until the ingredients are completely combined. You may also recheck the taste, whether you need to add more seasoning or not.

4Put the mixture over the four separate ramekins and place them on the baking sheet. Next, roll pasty on top of a surface that has been floured, then cut it into 4 and a half inches circle. Go back to the ramekins by brushing its edge with egg and give a circle of cut pastry on top of each.

5Finally, you may bake the ramekins. However, before you put them in the oven, you need to brush the pastry with egg again, and then you can let them bake in the oven for around 20 to 25 minutes until the filling is bubbly which means that it has been thoroughly cooked.
