How to Make Healthy Sweet and Sour King Prawn Stir-Fry

Ingredients:

  • 8 large shelled and veined king prawns; remove the heads but leave the tails
  • 3 tablespoons of groundnut oil
  • 1 tablespoon of honey
  • 1 tablespoon of grated root ginger
  • 1 finely sliced spring onion
  • 1 small handful fresh beansprouts
  • 1 small handful chopped yellow and red peppers
  • 1 finely chopped and seeded red chili
  • ½ cut of lime, juiced
  • ½ cut of chopped onion
  • 100 ml of pineapple juice
  • 50 gram of chopped and drained canned pineapple
  • steamed jasmine rice
  • freshly ground black pepper and salt

Directions:

1Add 2 tablespoons of groundnut oil onto your frying pan and heat it until smoking. Add the king prawns and stir them fry for about 4 to 5 minutes or until the prawns get cooked through and turn to pink. Once the prawns are cooked enough, remove from the pan and set aside. Add the chili and ginger to the remaining oil in the frying pan and stir them fry for about 30 seconds. Add the onions as well and stir for about 3 to 4 minutes or until they get softened.

2Meanwhile, blend the pineapple juice and pour it into the frying pan then stir them for about 2 minutes. Add the beansprouts and chopped peppers then stir them as well. For the taste, add ingredients like honey, lime juice, freshly ground black pepper and salt to the mixture.

3Place the prawns to the frying pan again and stir them with the sauce until the prawns get darker like the sauce color. Don’ forget to sprinkle the food with the spring onions. The Healthy Sweet and Sour King Prawn Stir-Fry is ready to be served with steamed jasmine rice.
