How to Garlicky Greek Chicken
This chicken is going to be so tasteful. You are going to make homemade chicken barbeque with herb rubbed that makes it totally flavorful. Surprisingly, it isn’t hard to make, even for a novice. Let’s try it.
- 8 chicken thighs
- ¼ tablespoon of pepper
- ¼ tablespoon of salt
- 9 slices of lemon, make thin slice
- 1 tablespoon of lemon juice
- 1 tablespoon of extra virgin olive oil
- 1 tablespoon of dried oregano
- 1 tablespoon of freshly minced dill
- 4 cloves of garlic, mince them

1Take a baking sheet and put the chicken thighs side up on it. Press firmly on each thigh to flatten the bone. Now, we need to separate the skin from the meat. Loosen the skin using your fingers. It should make a kind of pocket that is still attached on the edges. Set aside.
2Take a mixing bowl and add lemon juice, half of the olive oil, oregano, dill, and garlic. Mix them well. Then add this mix under the chicken skin. Make sure to fill two third of the available space. Next, add the lemon slices under the skin.
3Brush the chicken with the remaining oil. Make sure the surface is all brushed. Turn over the chicken and spread the remaining mixture on it. Top the chicken with the remaining lemon slices and keep in the fridge for 30 minutes. If you want to make it ahead, you can cover it with foil and refrigerate the chicken for 12 hours.
4Now, let’s cook the chicken. Brush your grill with oil first. Then, turn on the burner. If you have two burners, turn on just one. If you have three burners, turn on two of them. Season the chicken with salt and pepper, and put them on the grill with the skin facing down. Close the lid and cook for an hour or until thermometer inserted in the chicken shows 180°F. Take out for serving. Serve with zippy dill tzatziki for best taste.
