  • 225 gr of uncooked pasta (fettuccine)
  • 30 ml of olive oil
  • two cloves of minced garlic
  • 100 ml of milk
  • 200 ml of whole milk ricotta
  • Salt and cracked pepper to season
  • 110 gr of chopped spinach, choose the frozen one

1To start, you need to thaw the frozen spinach in a colander. While waiting for the spinach to get thawed, you may prepare to cook for the pasta and the sauce. Simply prepare a large pot, fill with water and boil it. Then, add the pasta until cooked through. Next, drain it up and set it aside for a while.

2When cooking the pasta, don’t forget to reserve the pasta water to combine with the sauce later. To prepare the sauce, you need to take a large skillet and heat it up with olive oil over medium-low heat. Then, put and cook the garlic in it for around 1 to 2 minutes until you can smell fragrant.

3Then, you can add the milk as well as the ricotta in it. Don’t forget to stir the ingredients until they are completely combined. Also, you need to allow the sauce to get heated through and simmer for a few minutes around 3 to 5 minutes to thicken the sauce. After that, season the sauce with salt and pepper to taste.

4Go back to the thawed spinach. You need to remove the excess water from the spinach by squeezing them up, simply using your fist. Then, add the spinach to the sauce and stir them well. Here, you may also add more salt or pepper to taste.
