How to Make Crispy Honey Chipotle Chicken Tacos with Cilantro Lime Rice

Ingredients:

For Chicken Chipotle:

  • ¾ cups of all purpose flour
  • ½ teaspoon of salt
  • ½ teaspoon of black pepper
  • ¼ teaspoon of ground cayenne pepper
  • 2 whisked eggs (whole egg)
  • ¾ cup of panko bread crumb
  • ¼ cup of plain bread crumb
  • ¼ cup of melted unsalted butter
  • 1 ½ pound of boneless and skinless chicken breast

For Rice:

  • 1 cup of cooked rice
  • ¼ cup of chopped fresh cilantro
  • 1 tablespoon of fresh lime juice
  • 1 teaspoon of lime zest
  • Salt and pepper to taste

For Taco:

  • 10 whole flour or corn tortilla
  • Ranch dressing to taste

For Sauce:

  • ½ cup of honey
  • ¼ cup of brown sugar
  • 2 garlic cloves, minced
  • 3 tablespoons of ketchup
  • 3 whole chipotles in adobo sauce
  • 2 tablespoon of hot sauce
  • 2 tablespoon of apple cider vinegar
  • ½ teaspoon of onion powder
  • 4 teaspoon of cornstarch
  • ½ cup water
  • Salt and pepper to taste

Directions:

1Take three different bowls. On first bowl, mix flour, black pepper, salt and cayenne. On second bowl, put the eggs. On third bowl, mix panko and plain bread crumb. Cut chicken into strips. Take one strip, dip in flour, eggs, and crumb. Don’t forget to remove excess ingredients.

2Preheat oven to 450 degree Farenheit and don’t forget to spray non-stick baking sheet. Then put coated chicken on baking tray and drizzle melted butter. Set temperature to 450 degree farenheit for 8 to 10 minutes. Flip chicken and use similar set. Take out after both sides are glazed well.

3While waiting, it is time to make sauce. Take a large bowl and pour in all sauce ingredients except for cornstarch. Mix together these ingredients then transfer to saucepan. Wait until it boils. On separated bowl, mix corn starch and water. Add cornstarch mix to saucepan. Keep stirring until sauce is thickened, usually 3 to 4 minutes. Turn heat to low.

4It is time to prepare rice by mixing it with lime juice, lime zest, salt pepper and cilantro. Take heated taco, and then put a layer of rice. On top of rice, give a piece of chicken meat. Drench ranch dressing if you like. Last, sprinkle cilantro and serve it.
