  • 45 gr of olive oil
  • 30 gr vinegar
  • 45 gr of chopped garlic
  • 30 gr of chopped basil (chopped)
  • Two large chicken breasts
  • Three tomatoes, chopped
  • Two red onions, chopped
  • 30 gr of grated Parmesan
  • 4 cups of zucchini in spirals
  • Salt and pepper


1Prepare a large zip-lock plastic bag and put the olive oil, vinegar, garlic, basil, salt, and pepper. Mix those ingredients with the chicken breasts and marinate for at least an hour, it will be better if you marinate it for 8 hours. However, after one hour, you can also use the chicken to cook.

2While waiting for the chicken to marinade, prepare a medium bowl with the chopped tomatoes, onions, grated parmesan, spiral zucchini, salt, and pepper. Mix the ingredients until well combined then refrigerate it for around 20-30 minutes or until the chicken is grilled and ready to serve.
