How to Make Bak Kwa (Chinese Pork Jerky)

To make pork jerky needs a long time, you have to prepare all the ingredients. Before you make it, check carefully to avoid the missing ingredients. After that, you may make it. The first step to make it, mix pork with salt, black pepper, and sugar. Mix well, then move to cutting board. Mix again to make sticky texture. Preheat to 180oC. Put on a sheet silver paper, spread honey and sesame seeds for re-baked. Repeat another side, and bake for 15 minutes.

Meat part:

  • 1 lb. minced pork
  • ½ teaspoon salt
  • 1 teaspoon Chinese five spice powders
  • 1 tablespoon Chinese cooking wine
  • 1 teaspoon ground pepper
  • 1 and ½ tablespoon light soy sauce
  • ½ tablespoon dark soy sauce
  • 1 tablespoon fish sauce
  • 1 tablespoon sugar
  • Several drops of sesame oil


1First, make minced pork combining salt, black pepper powder, sugar, light soy sauce, dark sauce and fish sauce. Stir well for 5 minutes and marinade for 30 minutes. After that, move to a cutting board and mince again for 5 minutes until sticky texture.

2Second, preheat for 5 minutes. Then move to silver paper on ovenware and put it, cover with plastic wrap and roll until ½ cm. Next, spread honey and sesame seed and bake for 15 minutes. The last, repeat the process in different position and re-baked for 15 minutes. Finally, cut becomes some sections.
