How to Make Vegan Lemon Bars
Just follow this simple recipe to get nice vegan lemon bars. They are perfect as a dessert or snack on the side of the pool. Like the tool, you will need an oven, so get it prepared and preheat it to 350o before jumping to mix the ingredients.
For the filling:
- ¾ cup of chilled lemon juice
- 14 ounce or one can of coconut cream
- 1 ¼ cups of organic granulated sugar
- ½ cup of corn starch
- 1 teaspoon of lemon extract
- 2 tablespoons of lemon zest
- ½ teaspoon salt
- A pinch of turmeric for the yellow colour (optional)
For the Crust
- 2 cups of all-purpose flour
- ½ cup of organic granulated sugar
- ¼ cup of non-dairy, unflavoured milk
- ¾ cup of vegan butter, leave it in room temperature for awhile
- ½ teaspoon salt
1Make the crust first. Put the sugar and vegan butter in a large bowl and beat it using a mixer in high-speed. You want a creamy texture so beat it fast. Put the milk in and mix the batter well.
2Begin to put in the flour, ½ cup at a time. Don’t forget to beat it well before adding more flours. In the last batch of flour, add a pinch of salt before put it into the batter. If you already get a thick batter, turn off the mixer and mix it with a large spoon. Spread it in a 13 x 9 inch baking pan evenly. Bake it for 20 minutes or until the crust edges begin to pull away from the pan.
3Let’s make the filling. Mix with whisk corn starch and lemon juice in a small bowl and then set it aside.
4Toss the sugar, coconut milk, lemon extract, lemon zest, salt, and turmeric into a saucepan and put it on medium heat. Stir the liquid frequently and wait until the coconut cream liquefies and the sugar dissolve. Wait until the liquid simmer and then add the lemon juice mixture. This mixture will thicken the liquid fast. Keep cooking the mixture but stir it only frequently and wait until it is glossy and tick.
5Spread the filling on the crust, when it is ready. Don’t forget to smooth the surface. Bake it for another 15 minutes until you can see the bubble in the filling’s edges.
6Take the pan and make it cool by putting the bar into a cooling rack. We want the filling to be thick, so let it until it is completely cool. Then you can slice and serve it. Even, you can keep it for two up to three days in room temperature or chill it in the refrigerator for one week.
