  • Two tablespoons of vegetable oil
  • Three cloves of garlic
  • 3 lbs of pork shoulders
  • 1,5 tablespoons of five-spice powder
  • One tablespoon of sesame oil
  • Four tablespoons of hoisin sauce
  • 120 ml of water
  • 280g of maltose or honey
  • Pinch of salt
  • One tablespoon of dark soy sauce

1Minced the garlic, and set aside. Heat the oil in the non-stick pan. After that, saute the garlic for about 30 seconds. Set the heat at the average level to feel and ensure that the taste of garlic has been taken out, and it will give taste to the pork.

2Clean the pork, and then cut the pork thinly just like strips. Spread the five spice powder on all side of the pork. Add sesame oil, hoisin sauce, water, and honey or maltose. Make the spices combine well, and the pork absorb the sauces well. Set the heat to high.

3Use the pair of tongs to flip when sauces come to boil. Place lid over the pan. Set the heat to the medium, and cook for 15 minutes. It’s doing to make the sauces reduce so the glazing thing will cover the pork.

4Remove the lid, add salt and dark soy sauce. Taste if the sauce is salted well and add if the sauce still too sweet because of maltose and hoisin sauce. Cover again and cook again for 15 minutes.

5Remove the lid, and flip the meat again. Cover and continue for 15 minutes. Repeat once again, and then if the sauce is thickened, cook for about 2 minutes. Turn off the stove. And when Char Siu is cool enough, serve it.

If some of you may ask the replacement of hoisin sauce, just you have to mix 1 cup of thick barbecue sauce, four teaspoons of molasses, four teaspoons of soy sauce, four teaspoons of yeast extract and three teaspoons of five-spice powder. Well, the Stove Top Char Siu is ready to serve.
