How to make Slow Cooker Pineapple Pulled Pork Tacos

Ingredients:

Main ingredients:

  • 1kg pork (tenderloin)
  • A can of pineapple chunks including the juice
  • 50 ml (gluten free) soy sauce
  • 30 gr of preserved apricot
  • A teaspoon of garlic (powdered)
  • A half teaspoon of pepper

Sauce ingredients:

  • 150 ml ketchup
  • 150 gr pineapple chunks (reserved)
  • 45 gr (preserved) apricot
  • 45 gr (brown) sugar
  • A tablespoon of (white wine) vinegar
  • 30 ml of lime juice

Complement ingredients:

  • 16 layers of corn tortillas
  • Cilantro and green onions as the garnish
  • 200 gr (goat) cheese

Directions:

1To start making this dish, you need to prepare crockpot with large size. Then, you may put the tenderloins part of the pork into the crockpot. After that, you may leave the pork aside for a while and start to prepare for the other remaining ingredients.

2Now, take a mixing bowl with medium size, then place some ingredients in it, such as soy sauce, garlic powder, pineapple juice (from the can), preserved apricot and pepper. Combine them well and continue to pour it over the pork and also place the pineapple chunks on it.

3After that, cook the mixture over low heat for around 6 to 8 hours long. In the last 30 minutes, you need to make sure that you have shredded the pork and put it back again to cook until it is completely cooked. While waiting, you may continue to make the BBQ sauce.

To make the Sauce:

1Prepare a food processor or you may also use a blender to combine all of the sauce ingredients in it, like ketchup, reserved pineapple chunks and apricot, vinegar of white wine, lime juice, brown sugar. Here, make sure is completely combined and well blended.

2Before serving, you may heat the BBQ sauce to make it warm. Also, after the pork is completely cooked, you need to drain the remaining liquid from the pork and then bring all of the complement ingredients, like corn tortillas, cheese, cilantro and green onions.
