This flatbread tastes wonderful. You get the crunchiness at the first bite, and you get to taste the savory and tender shrimp, along with creamy and cheesy taste while your tongue experience some spiciness from the red pepper and fresh touch of the lemon.
How to Make Shrimp Scampi Flatbread
There is nothing difficult about making this dish. Just make sure you get the shrimp well cooked while you can omit the red pepper flakes if you are serving this to your kids.
- 1½ lb of large shrimp, deveined and shelled
- 2 cups of shredded mozzarella
- 1 large flatbread, store bought
- 1 lemon, use the juice and zest
- Black pepper, freshly ground
- Kosher salt
- Crushed red pepper flakes
- 3 cloves of garlic, mince
- 2 tablespoons of butter
- 2½ tablespoons of olive oil, divide
- More red pepper flakes for garnish, optional
- More lemon zest for garnish, optional
- Parsley leaves for garnish, optional
1Preheat the oven to 400°F. Turn on medium heat and put a large skillet over it. Into the skillet, heat two tablespoons of the butter and olive oil, and wait until the butter melts and the oil gets hot. Add garlic and cook until it turns fragrant. Toss in the crushed red pepper flakes and stir for another minute.
2Next add the shrimp and add pepper and salt. Sear both sides of the shrimp until it turns pink. You may need to sear it for around two minutes for each side. Stir in the lemon juice while searing the shrimp and wait until most of it is evaporated. Remove the skillet from heat. Set aside.
3Prepare a baking sheet and transfer the flatbread into it. Brush the entire surface f the flatbread with the remaining ½ tablespoon of olive oil. Add shredded mozzarella cheese over the flatbread, and top it with the shrimp mixture you prepared previously.
4Transfer the baking sheet into the oven and bake the flatbread for around twelve to fifteen minutes. When the bread turns light brown or golden, you know you are done baking it. Take it out of the oven and garnish with more red pepper flakes, lemon zest, and parsley leaves.
This is a fun menu to serve for weekday dinner. You can also serve it as snack during happy hour, and appetizer when it comes to complete course of dinner.
