While baked salmon is always appreciated, this salmon meatballs with a drizzle of avocado cream is a perfect twist. It is crunchy and soft, savory and sweet, and spicy and juicy at the same time, while it finishes with creamy touch on your tongue.

How to Make Salmon Meatballs with Avocado Crema

You need to do two major process, to make the meatballs and the avocado cream dressing. However, it is simple enough as long as you use your food processor.

Ingredients

  • 1 lb of salmon fillet
  • Black pepper, freshly ground
  • Kosher salt
  • 1 whole egg
  • 2 cloves of garlic, mince
  • 2 tablespoons of freshly chopped parsley
  • ½ teaspoon of chili powder
  • ¼ cup of panko breadcrumbs

For Avocado Crema

  • 1 avocado
  • 2 tablespoons of parsley
  • ¼ cup of basil
  • ¼ cup of yoghurt or sour cream
  • 2 limes, use the juice only

Directions

1Skin the salmon and cut into small cubes, set aside. Preheat the oven to 350°F. Prepare a baking sheet, preferable one large and rimmed. Line with parchment paper and coat the paper with cooking spray. Set aside.

2Prepare your food processor, and the salmon cubes into the bowl. Process the salmon until it turns to smooth ground salmon meat. Transfer the salmon into a large mixing bowl. Into the mixing bowl, add together pepper, salt, egg, garlic, parsley, chili powder, and panko bread crumbs. Fold until everything is well mixed.

3When it reaches the right texture, take some of the mixture and roll it into meatballs. This recipe makes a tablespoon sized meatball. When you are done rolling the meatballs, put it into the baking sheet. Repeat the steps into the entire remaining meat mixture. Transfer the baking sheet into the oven and bake until the balls turn golden and the meat is cooked through. Transfer it into your serving plate and set aside to cool a little bit.

4While waiting for the balls to be ready, make the crema. Into your food processor bowl, add together pepper and salt to season, parsley, basil, yoghurt or sour cream, lime juice, and vocado. Process everything until it turns to smooth cream or sauce. Add some water if it is too thick. When it is ready, drizzle it over the salmon meatballs, and serve.

Serve it for appetizer, or snack, or a condiment. However you serve this, it will please the crowd. Try it.
