How to make Rainbow Fritters

This beautiful yet yummy meal is very easy and simple to make. You can make your kids happier by giving this colorful fritters to them in less than 20 minutes.  The important point of making this dish is to squeeze the carrots and zucchini until you have no water remains in them. Ingredients:

  • A medium zucchini, grated in about 130 gr
  • A small carrot, grated into 60g
  • A half of red capsicum pepper, diced into 60g
  • 65 gr of corn kernels
  • 30g of grated parmesan
  • A pinch of chopped parsley
  • 2 eggs
  • 40g of chickpea flour
  • Vegetable oil or olive oil

Directions:

1The first thing that you need to do is to get rid of the water remained in the grated carrot and zucchini. Simply squeeze it out by using a clean cloth. All you have to do is squeeze the water with the cloth until there’s no water remaining. Then, put the squeezed carrot and zucchini in a mixing bowl.

2Add other ingredients to the bowl, like corns, parsley, parmesan and don’t forget to add peppers as the seasoning. After that, mix these ingredients until well combined. Put the egg in while you are stirring and mixing the ingredients. Then, add the flour and mix again until all of the ingredients are properly combined.

3Next, you need to prepare a large frying pan and put the vegetable oil or olive oil on top of it. Turn the heat over medium-low heat and add about a scoop of the mixture into the pan. Simply use a fork to press the mixture. Then, fry each side of the mixture for around three until 4 minutes.
