  • A tablespoon of oil
  • A medium onion, cut into cubes
  • 6 cloves of chopped garlic
  • two teaspoons of cumin (toasted and then ground)
  • 900 ml chicken broth
  • 400 gr hominy, make sure you soaked it in cold water the night before
  • 3 pounds of chicken legs or thighs
  • Two teaspoons of oregano
  • 450 gr tomatillos
  • Two pieces jalapenos, cut into halves
  • Two pieces of poblano chilies, cut into halves
  • 100 gr chopped cilantro
  • 30 ml lime juice
  • salt and pepper as the seasoning


1First of all, you need to prepare a saucepan in large sized. Then, place the oil on it and heat over medium-high heat. After that, you may put the onion to cook for around 3 or 5 minutes until they become tender. Then, you can continue to add the cumin and garlic.

2After that, you still need to combine some more ingredients in it, such as the chicken broth along with the chicken as well. Also, the hominy needs to be combined with the mixture. Stir and cook them well. Here, you need to bring the mixture to boil and then lower the heat to simmer for around 2 hours until the hominy gets tender.

3Also, make sure that the hominy is chewy and thoroughly cooked. While waiting, you may use the time to prepare for the remaining ingredients. Prepare an iron pan and heat it over high heat to roast some ingredients like jalapenos, tomatillos, and poblanos.

4Make sure they become charred black. Next, prepare a blender and place the roasted ingredients in it along with the chopped cilantro. Also, don’t forget to add the broth from the soup. Blend them well and combine it into the soup. Then, you need to take the chicken out of the soup

5Before you shred the chicken, you need to allow it to cool for several minutes until you are ready to shred it up. After it is done, you may bring the chicken back to the soup. Don’t forget to add the lime juice along with the seasoning of salt and pepper to taste the soup.
