Ingredients:

  • Twelve ounces dry pasta
  • ½ small cubed eggplant
  • Two small glasses button mushrooms and sliced
  • Three cloves garlic
  • 1 ½ small glasses vegan marinara sauce
  • Two small glasses water
  • Two teaspoon sea salt
  • One teaspoon black pepper
  • Two tablespoons olive oil
  • Fresh parsley

Directions:

1Rinse eggplant and slice into small. Put in a colander and sprinkle with sea salt, wait for 20-30 minutes. After that, rinse and pat dry with a towel. Heat a large pan on medium-high and pour two tablespoons olive oil, eggplant, and one clove garlic.

2Sprinkle ½ teaspoon sea salt and stir it, wait for 3-5 minutes and until a golden brown is achieved, don’t forget to add mushrooms. To the same pan, add pasta, marinara sauce, water and cloves of garlic. Begin with 1.5 teaspoon sea salt and one teaspoon black pepper.

3Boil water and cook pasta until the pasta is cooked to al dente, for around 10 minutes. And then, stirring once or twice. After that, give spice on it, and you also add fresh parsley too. Mix it with eggplant and mushroom on it to make it more delicious. Immediately present now on the prepared plate.
