If you need to make a simple, quick and delicious dinner, you must try this One-Pot Chicken and Rice recipe. All ingredients are very easy to get and all cooked in one pan, which means no mess in your kitchen. For those who are on a gluten-free diet or lactose intolerant, this dish is perfect for you!

How to Make One-Pot Chicken and Rice

You can use either chicken breast, chicken thighs or chicken drumstick. This recipe uses uncooked white rice, however, if you prefer to have brown rice, you need to cook it longer by adding another 20 to 30 minutes.


  • 2 large pieces of chicken breasts (boneless and skinless), can be changed with chicken thighs or drumsticks
  • 1 cup or 200 grams of white rice
  • 2 tablespoons of olive oil
  • 2 tablespoons of lemon juice
  • 2 cups of chicken stock (choose low sodium)
  • Chopped Cilantro or parsley

Mix Spices to Seasoning the Chicken and Rice

  • ¾ teaspoon of garlic powder
  • 2 teaspoons of paprika powder
  • 2 teaspoons of dried thyme
  • 2 tablespoons of brown sugar
  • 1 teaspoon of dried parsley
  • ½ teaspoon of black pepper
  • ½ teaspoon of salt


1Mix all spices in a small bowl and set aside. Take two tablespoons of mix spices for a chicken and rest for the rice during cooking. Wrap the chicken with a plastic wrap or you can put inside of ziplock plastic, then pound the chicken to have an equal thickness. This method will help the chicken to be cooked thoroughly and tender. Rub the chicken with the mix spices thoroughly.

2In a large skillet, heat 1 tablespoon of olive oil with medium to high heat, cook chicken breast for about 5 – 7 minutes on each side or until it changes into brown colour. Please note that you don’t need to cook thoroughly the chicken because you will cook it again with the rice. Set aside the chicken.

3Use the same skillet, add one tablespoon of olive oil and heat it with medium to low heat. Put the uncooked rice and chicken stock, stir it. Add 2 tablespoons of lemon juice and the remaining mix spices. Cook for a while and put the chicken back into the pan. Cover the pan and simmer it for about 20 minutes and almost all liquid is gone. Chop cilantro or parsley and garnish it on the top of the dish.

It is very simple and easy to make. You can change the white rice with basmati or jasmine rice and keep the same cooking time. This One-Pot Chicken and Rice will be one of the favourite meals of your family. Not only delicious, but it is also healthy.
