Ingredients:

Chicken Portion

  • 4 pieces (approx. 8 ounces) of chicken breast; skinless, boneless
  • 2 tablespoon of kosher salt
  • 1 ½ tablespoon of black pepper
  • White sandwich bread

Dry Dip

  • ½ cup of all purpose flour
  • ½ tablespoon of salt
  • 1 tablespoon of black pepper
  • 1 cup of panko bread crumb

Wet Dip

  • 1 egg
  • 1/3 cup of buttermilk
  • ½ tablespoon of Tabasco

Spicy Oil

  • ¼ cup of olive oil
  • Cayenne pepper to taste
  • 1 tablespoon of brown sugar
  • ¼ tablespoon of salt
  • ¼ tablespoon of black pepper
  • ¼ tablespoon of chili powder
  • ¼ tablespoon of paprika
  • ¼ tablespoon of garlic powder

Directions:

1Clean chicken breasts and dry them with paper towel. Rub all sides of chicken with kosher salt and black pepper. Cover it with plastic and let it sit for 30 minutes. While waiting for marinating process, preheat oven to 425 Farenheit. Bring over baking pan and cover it iwh parchment paper. Spray it with non-stick cooking substance and put the pan aside.

2Into first medium bowl, whisk all dry dip ingredients together except for panko bread crumb. Set it aside. For second medium bowl, mix all wet dip ingredients. Make sure they are whisked well. Take third medium bowl and put panko bread crumb in it.

3Take one marinated chicken breast and put it into Dry Dip. Shake excess flour and proceed to wet dip. Make sure both sides are covered. Then, put it on panko bread crumb. You might want to gently press the bread crumb, so it will stick well. Repeat to the remaining chicken breast.

4Put coated chicken breast on prepared pan. Put it inside the oven for 10 to 12 minutes. Take pan out, flip the chicken breasts and put them back to the oven for another 10 to 12 minutes. While waiting, you could mix spicy oil ingredients in separated bowl. When chicken breasts are fully cooked, brush top part with spicy oil. Serve it on top of sandwich bread.
