How to cook Mustard Chicken

Known also as Poulet à la Moutarde, you can easily make this main French dish at home by following the recipe below which is enough for four serving portions.

Ingredients:

  • Eight pieces of chicken thighs included the bone and the skin
  • 90 gr of Dijon mustard
  • A tablespoon of whole grain Dijon mustard
  • 30 gr of butter
  • 75 gr of Crème fraîche
  • 200 ml of chicken stock
  • 15 sprigs of thyme
  • A bay leaf
  • A small onion, sliced
  • A small shallot, sliced
  • Salt and pepper as the seasoning
  • Parsley as the garnish

Directions:

1To begin the cooking process, first of all, you need to turn on the oven over 350 Fahrenheit-degree or 180 celsius-degree. Hence, when you want to braize the mustard chicken, the oven is ready to use. Meanwhile, you may prepare for other ingredients.

2In a large bowl, put the chicken thighs and give the salt and pepper in it as the seasoning. Also, rub them with mustard. Make sure you rub the entire part of chicken thigh evenly. Thus, when you serve this, you can feel the taste in all part of the chicken.

3Next, prepare a Dutch oven, or you may use a big oven-proof skillet. Then, turn on the heat over medium-high heat and put the butter on it. Melt the butter while adding the chicken thighs in it. Cook them for several minutes until the color of the chicken turns slightly brown. Then, remove the chicken to a plate.

4Still using the same skillet, put the sliced shallot and onion in it. Saute for around 5 minutes and add chicken stock, thyme and bay leave. Here, in the bottom of the pot, don’t forget to scrap the brown bits off while cooking the ingredients. Also, add the creme fraiche and cook again until it cooked through.

5To continue, place the chicken into the mixture. Combine well and then it is ready to braize in the oven for around 50 to 60 minutes. When it is well cooked, you may remove the mustard chicken out of the oven and serve it on top of a plate with parsley as the garnish.
