  • 120 gr of mayonnaise
  • 120 gr of cilantro, finely minced
  • A clove of garlic, minced
  • One lemon, zest it into around 2 teaspoons
  • One lemon, squeeze into 2 tablespoons of juiced lemon
  • 120 gr of crumbled cotija cheese
  • Chipotle pepper as the seasoning
  • Slices of lemon

Directions

First, get a medium bowl then mix the Mexican sour cream, mayonnaise, cilantro, garlic, pepper and the lemon both lime zest and lime juice. Add salt if it is needed then set aside for a while.

2Mix those ingredients until well combined. Then you can continue to get to the grill for cooking the corn. Simply put the corn onto the grill around 3 minutes and do not turn the corn yet. After the corn turns brown or partially burnt, you can turn the corn up and repeat the same step to the other side.

3After all sides of the corn get burnt and turn brown, you can remove the corn from the grill and place in on a plate. Then it is time for the topping. Here, you can spread the corn with the help of a brush or spoon. Brush the crema mixture evenly then give crumbled cojita cheese on top of it. You may also add chipotle pepper as the topping. Finally, serve your Mexican Street Corn with the sliced lemon or lime wedges.
