This cookie recipe is unlike the others. It has the fluffy shape and golden brown color while it offers enough sweetness and tenderness on the inside. This recipe is definitely for everyone.
How to Make Marbled Lava Cookies
It takes almost the usual ingredients, but the method we are going to do will be slightly different. You will like the change as it affects the taste and texture.
- 1 cup of unsalted butter on room temperature
- 1¼ cups f bread flour
- 1¼ cups of all purpose flour
- 1 teaspoon of vanilla extract
- 1 whole egg
- 1 yolk
- ¾ cup of granulated sugar
- A cup of brown sugar, light one
- 8 rounds of chocolate truffles, chop them
- 3 tablespoons of cocoa powder
- 2 tablespoons of peanut butter
- ¾ teaspoon of salt
- ¾ teaspoon of baking soda
- Sea salt flakes
1In a mixing bowl, add together all the sugar and butter. Mix them using a mixer on medium speed. Mix until they are well combined into creamy texture, fluffy, and light. It should take around three to four minutes. When it’s done, add the yolk and whole egg. Mix until well combined. Then, add the vanilla extract. Switch the speed to low and add the rest of dry ingredients but cocoa powder. Mix until they are incorporated.
2Now, turn off the mixer and take out the dough. Split it into two parts. Add peanut butter on the first part, and cocoa powder for the second part. Mix each part to combine everything. Then, flatten the dough. Make it into 6×8 inches sheet and use cling film to wrap them. Keep in the fridge for around an hour.
3When they are chilled enough, flat them into rectangle with ¼ inch of thickness. Now put the peanut butter dough on top of the cocoa dough. Cut this stack in half length wise, and fold them in half like a book width wise. Now, flatten them again and then roll it. Do the same thing to the other half. Wrap again and chill the dough for another hour.
4Set the oven to 350°F, take out the dough, and line the baking sheet. Slice the dough and make sure it is thick enough. Take one slice and put the truffle in the top middle, and top with another slice. Do this to all of the dough. Then, flatten the stack. Transfer to the baking sheet. Bake for around 9 minutes or until it changes to golden brown. Take out the baking sheet and let it cool before serving.
