How to make Greek Kale Quinoa Salad

In less than an hour, which is only 30 minutes, you can cook Greek Kale Quinoa Salad at home. This salad consists of many healthy ingredients which range from kinds of vegetables that you can easily find along with the spices and herbs.   • 400 ml of water
  • 200 gr of quinoa
  • 100 gr of baby kale, with no stems
  • 100 gr of quartered cherry tomatoes
  • 100 gr of diced cucumber
  • 100 gr of minced red onion
  • 30 gr of kalamata olives
  • A tablespoon of chopped fresh parsley
  • 30 gr of olive oil
  • 30 ml of lemon juice
  • Salt and pepper as the seasoning

1First, you need to prepare a medium saucepan and pour the water as well as the quinoa in it. Then, turn on the heat and don’t forget to make it boil. After that, lower the heat and simmer for around 15 minutes or until the liquid in the pan is completely absorbed.

2While waiting for the quinoa mixture, you can prepare for other ingredients. Take a medium bowl and fill with the rest of the ingredients like baby kale, cherry tomatoes, diced cucumber, minced red onion, kalamata olives, olive oil, lemon juice and chopped parsley.
