- 400 ml of water
- 200 gr of quinoa
- 100 gr of baby kale, with no stems
- 100 gr of quartered cherry tomatoes
- 100 gr of diced cucumber
- 100 gr of minced red onion
- 30 gr of kalamata olives
- A tablespoon of chopped fresh parsley
- 30 gr of olive oil
- 30 ml of lemon juice
- Salt and pepper as the seasoning
