- 4-6 chicken breasts with no bones and skin
- vegetables like mushrooms, onion, baby tomatoes, zucchini
For the marinade:
- 50 ml olive oil
- 50 ml squeezed lemon juice
- 15 gr of minced garlic
- One and a half teaspoons red wine vinegar
- One and a half teaspoons dried oregano
- A pinch of dried thyme
For the lemon rice:
- 200 gr long grain rice
- 30 gr olive oil
- 30-45 ml lemon juice
- 400 ml hot chicken broth
1To make the Greek Chicken Souvlaki: Cut the chicken breasts into several large chunks. In a zip-lock plastic bag, mix the chicken along with marinade ingredients. Seal the plastic bag and make sure all chickens are covered with the marinade. Then, put it in the refrigerator for six until 8 hours. Here, you can also marinade the veggies in a separated bag.
2After 6 hours or more, you can grill the chicken on the non-stick spray or olive oil grill. Put the chicken through the skewers. Do the same with the other vegetables. 3To Make the Lemon Rice: Prepare a saucepan and turn on the heat over medium heat with olive oil on it. Then, sauté the rice for two until 3 minutes. Stir occasionally while adding the salt and lemon juice to the rice and sauté again for one more minute.
4Pour the chicken broth and make it boiled. Then, lower the heat, cover the pan and cook the ingredients for about 30 minutes. If there is still liquid remains, then cook again for 5 minutes. After all the liquid has reduced, open the lid and turn off the heat. Next, let it rest for 10 minutes.
