This dish is actually a cream soup. However instead of using chicken, it uses crab meat which is a fresh twist. It is creamy, soft, warm, and savory at the same time.

How to Make Crab Bisque

This recipe uses lump meat to get the ultimate crab flavor in the soup. It means you need to stir carefully so the lump meat is whole.


  • 1 lb of crab lump meat
  • ½ cup of heavy cream
  • 1 bay leaf
  • 1 cup of white wine, dry
  • 4 cups of fish stock
  • 3 tablespoons of flour
  • 3 tablespoons of tomato paste
  • 2 cloves of garlic, mince
  • 1 teaspoon of Old Bay seasoning
  • Black pepper, freshly ground
  • Kosher salt
  • 2 stalks of celery, chop fine
  • 1 medium onion, chop fine
  • 3 tablespoons of butter


1Prepare a large pot, and put it over a medium heat. Then, add the butter and cook until it melts. Next add the celery and onion, cook until both are soft. It should take around five minutes. Season with pepper, salt, and Old Bay, and stir. Next, add tomato paste and garlic, and cook until the garlic smells fragrant. Stir occasionally. When the tomato paste already covers the veggies, sprinkle the flour over it. Stir again until the flour is fully dissolved.

2When the flour is dissolved, add the wine and seafood stock and stir. Add bay leaves and stir again. Reduce the heat and keep cooking until the soup simmers. Stir occasionally until the flavors meld and the entire liquid simmers.

3Next, remove the bay leaves. Then, transfer the soup to a blender, and process the soup until smooth. Transfer it back to the pot and cook over low heat. Stir in crab meat and heavy cream and stir carefully so you don’t break the crab meat. Cook until the entire soup is warm.

4After around five minutes of cooking, it is finally ready to serve. Divide the soup into your serving bowl. Garnish with anything you like to add. It can be some more crab meat, bay leaf, or anything else you like to over the soup. Serve while it is warm.

Serve this soup while it is cold or when you don’t feel very good. It also makes an elegant dish on your dinner menu while making it is really easy.
