Ingredients:

  • 30 ml Avocado oil
  • A Yellow onion, cut into cubes
  • Four cloves of minced garlic
  • Two pieces of Bay leaves
  • A can of diced tomatoes
  • 200 gr Chipotle Salsa
  • 200 ml Beef broth
  • 450 gr Ground beef
  • 225 gr Chorizo
  • An Egg
  • 50 gr Half and half cream
  • 90 gr Almond Flour
  • A half teaspoon of Cumin
  • A half teaspoon of Salt
  • 65 gr Chopped cilantro or more

Directions:

1The first thing to do to make this Albondigas Soup (Mexican meatball soup) at home is by preparing a pot, the heavy large one. Then, pour the oil in it to heat over medium-high heat. After several times, the oil is hot enough. Then you may add other ingredients to it.

2To continue, you need to add the onion and cook until it gets soft. After that, also add the minced garlic in it to cook for around a minute or more until you can smell fragrant. Next, pour other remaining ingredients into the heavy pot to cook.

3The ingredients are salsa, tomatoes, bay leaves and the beef broth. Stir and cook for several minutes. Then, you may lower the heat to simmer the mixture for some minutes. While simmering, you may continue to do the following step as written below.

4Prepare a large mixing bowl and combine some ingredients in it, such as egg, beef, almond flour, half and half cream, chorizo, salt, chopped cilantro, and cumin. Mix them well and take around two tablespoons of the mixture to turn into a ball. Do the same steps until it produces several meatballs.

5After you make some meatballs, you may put them into the soup to cook. Here, you will need to put on the lid and simmer for around 20 minutes. Make sure the meatballs are completely cooked, and you may turn the heat off and discard the bay leaves before serving.
